Vacation Planning

So, we're going to Disney in June with my parents and my sister's family. It'll be 11 of us total, my daughter will celebrate her 4th birthday while we're there. I'm trying to cover all my bases to make sure we can do what we want to do. I've booked the Princess Breakfast on her birthday and I've booked time for the kids at one of the activity centers so hubby and I can go out by ourselves. We'll be staying one night at the new Nick Hotel, so I had to book our breakfast with the characters there too. I've found a petsitter to stay with the zoo and I know there's plenty more left to do. So what sort of loops do YOU jump through to plan a vacation?
